This sweet and savory bread is a delicious treat whether it’s served cold, warm, or toasted!


  • 2 1/2 cups sugar
  • 3 tsp vanilla flavoring
  • 3 eggs
  • 1 cup oil
  • 3 cups self rising flour
  • 1/2 to 1 cup of nuts if desired
  • 3 tsp cinnamon
  • 2 cups grated zucchini squash

  • Preheat oven to 325° F
  • Combine ingredients in order
  • Divide between 2 greased and floured loaf pans
  • Bake for 1 hour
  • Let cool for 30 minutes before removing from pans
  • Cool for additional 30 minutes before serving
